Sugar takes many forms. Many types of sugar are produced from high-quality refined sugar. The various different kinds of sugar cubes (lump sugar, espresso sugar cubes), as well as sugar cones are created by compression. Icing sugar and caster sugar are made by grinding. Caster sugar is icing sugar that neither forms lumps nor melts on warm pastries. Gelling sugar is made of sugar, apple pectin and citric acid. White and brown granulated sugar is made by allowing a high-quality sugar solution to slowly crystallize. Brown sugar is granulated sugar that has been refined with sugar cane syrup. Sugar for making treacle is made using a special process.
