Cherryjam with elderflower

Ingredients

  • 1 kg bright red cherries
  • 1 kg Wiener jam sugar 1:1
  • Juice of one lemon
  • 2 tablespoons cherry water
  • 6 large clusters of elderflower

Cooking

Wash well ripened cherries, drain them, pit it and puree. Stir the mass of Fruit with jam sugar, add the juice of one lemon and can be run through a short. Now shake the elderflower well, sort und pluck them off and then do it in the prepare jars. Then bring the fruit mixture to boil and stirring constant while 4 minutes at the sparkling boil. Pull pan from the stove and stir the cherry water under. Fill the hot jam in the jars an close it immediately.

Wiener Gelling Sugar 1:1

1 part fruit and 1 part gelling sugar

To produce jam or jelly. Wiener gelling sugar is a fine crystal sugar which is mixed with citric acid and pectin in the correct relationship. The ingredients cause gelation, the sugar acts as a preservative. Fruits and sugar are in 1:1 processed. 1 kg package
